BENEFITS OF NUT CONSUMPTION

OUR HISTORY

We are a small family company from the conurban of the province of good air with more than 20 years in the world of planting and harvesting of patagonian walnuts. since then we have been working hard on the growth of the specimens in both volume and quality, seriously committed to the care of the environment and the sustainability of basic resources such as water and providing work for the people of the area. our first years have been very difficult, the preparation of the land, investment in new copies, the implementation of new irrigation and anti-frost systems. we have had countless problems and past but we do not lower our arms, we redouble efforts, we learn daily from the needs of the field and its land. we now see all that effort reflected in the size of the trees, the quality of the fruit, the increase in tons harvested year after year and that is strongly motivating us for the future.

We choose black river to develop our activity because it has the ideal conditions for the growth and development of the walnuts taking into account key factors such as climate, soil and irrigation. this combination makes it possible to project in a proliferative plantation and thus to obtain a fruit of great size and very good quality. throughout this time, we have been incorporating new copies, new techniques of work and use of resources, together with new machinery and infrastructure, always thinking of continuing to grow.

THE WALNUT FROM THE TREE TO HIS HANDS

Not only does our work occur in the months of harvest, but throughout the rest of the year we carry out various tasks of care and maintenance of the field, aimed at the growth and well-being of our specimens, protecting them from climatic indecency, providing them with the nutrients and conditions necessary for them to develop a healthy fruit and the best quality possible. below we tell you a little bit about how the nuts come from the field to your home.

• the time of harvest, usually between april and may, the fruit matures and falls to the ground, where it rises under rigorous selection methods and begins processing right there on our plant.

• the walnut, even with a shell, is washed in a machine particularly intended for the cleaning of the fruit, taking out remains of land and dirt.

• then it is dried in an oven until the appropriate moisture percentage is obtained for proper conservation.

• a classification process is then initiated according to its size (calibres), which is commonly known as a thinning. * (some of the larger-caliber nuts are reclassified by checking that they have no anomaly, then are packed).

• once received, they go to a mechanical peeling process where they are classified according to their form: butterfly, quarters or quartiles. from there they are also classified by quality: extra light, light, yellow, light amber and amber.

• are finally packaged for distribution.

* all products are stored in a 5 ° cold chamber to ensure their conservation.
